Frozen meat products

Frozen meat products have the advantage that the product can be stored for a longer period than fresh or processed products. Therefore this product can easily be transported over long distances throughout the world.

Risks of bacterial growth are minimal as long as the product stays frozen at all times. Fluctuation of temperature should be avoided since it causes physical problems, that sho at thawing by release of higer amounts of fluid.

The thawing of frozen products, either at home or at an industrial scale is probably the biggest safety hazard.
