It is important to check frequently the rooms and machines of the packing station on Salmonellae. For a reliable test an independent test bureau can do the testing. From every lot of eggs a random sample is taken. These eggs are tested for scale colour, strength, thickness of egg white, colour of yolk and Salmonellae. A check for presence of residues can also take place. The sample size should be in relation to the size of the lot.
